Gochu Jang BBQ Ribs

We have received many requests for this recipe. 

This rib has tangy, spicy, and smoky all in one.  

This recipe is based on cooking gas grill and oven and both 2 methods are explained below. 

 

INGREDIENTS

1 rack baby back pork rib (about 3-3.5 lbs)
   Oil

For the sauce

3 Tbsp Gochu Jang

2 Tbsp Smoked Paprika Powder

1/2 cup Yellow onion, ground

1/2 cup Apple, Peeled, cored, and ground

2 Tbsp Rice wine vinegar

4 Tbsp Brown sugar

3 Tbsp Soy sauce

2 Tbsp Garlic, minced

1 Tbsp Ginger, minced

4 Tbsp Corn syrup


******Cooking on gas grill

  1. Mix all the ingredients for the sauce. It’ll be about 2 cups.
  2. Pat rib dry with a paper towel and using about 1 cup of the sauce, marinate pork rib at least for 1 hour. Make sure the marinade sauce coats every part of the rib. (Cut the rib in half if difficult to handle).
  1. Preheat gas grill to 300F degrees and oil the grill grates. If you have a 3 burner gas grill, have the middle burner off and keep the side burners on medium low.
  2. Place rib on the middle of aluminum foil, wrap it,  and seal any open area.
  3. Place the foil covered rib on the grill.  Close the grill lid  and leave it unopened about 1 hour.
  4. Open the foil and you will see some liquid accumulated and end tip of rib bones exposed. Carefully remove foil and liquid and bring the rib directly on to the grill grates.
  5. Baste the rib with about 1/2 cup sauce, close the grill again, and cook for 5 minutes.
  6. Open the grill and baste the rib with the remaining 1/2 cup sauce, close the grill, and cook for additional 5 minutes.
  7. Place the cooked rib on a cutting board and allow it to rest for a few minutes. 
    *Depending on the size of pork rib, you might have some sauce leftover. Boil the left over sauce down and use it as a dipping sauce for the rib. You’ll love it!


***** Cooking in the oven

  1. Preheat oven to 320F.
  2. Season the rib with salt and pepper and place on a baking sheet or tray lined with foil.
  3. Mix the rest of the ingredients to make marinade sauce.
  4. Rub the 1/3 of the sauce all over the ribs on both sides. Cover tray with foil and bake for about 90 minutes.
  5. Open the foil and rub 1/3 of the sauce all over the rib on both sides. Cover tray with foil and bake for another 90 minutes.
  6. Remove rib from the oven, remove foil and spread the top of the rib with the remaining   sauce mixture.
  7. Return the rib to the oven, uncovered,. Set the oven settings to broil to lightly char and caramelize the edges (about 3 - 5 minutes).
