Spicy Soba Noodle Salad with Mango and Cucumber
Adding Gochu Jang in dressing makes whole dish spicier and brighter. It's perfect for the main dish or appetizer. Mango adds sweetness to the dish balancing out the spicy flavor from Gochu jang. You can use other fruits such as pear or apple if mango is not available.
1 bundle Soba (90 gram)
2 tsp Gochu Jang
1 Tbsp White Wine Vinegar
3 Tbsp Olive Oil
2 tsp Honey
1 Tbsp Shallots, chopped
1/2 tsp Garlic, minced
1/2 Tbsp Lemon Juice
Salt & Pepper
cucumber, carrot, and red cabbage cut in thin stripes.
edamame & Cilantro (Optional)
Cook soba according to the direction and set aside.
Make dressing by mixing gochu jang, vinegar, oil, honey, shallots, garlic, lemon juice an season with salt and pepper
Mix soba noodle with dressing.
Add mango and other vegetables to the noodle and toss it all together.
Garnish with edamame and cilantro (optional)
