Kimchi Pasta

Really good pasta doesn’t take a long list of ingredients. Cooking pasta with Kimchi can be as simple as it can get. If you don’t like bacon, you can omit it and add your other favorites such as mushrooms, shrimp, or chicken. Enjoy! 

Enough for 2 persons | Takes about 30 minutes to make

 

4 oz                 Pasta Noodles

1/2 cup            Canned, diced tomato

4oz (4 strips)   Bacon, cut into 1“ inch strips

1/2 cup            Yellow onion, chopped

1/2 Tbsp         Minced garlic

1 cup               Kimchi, chopped

1tsp                 Sugar

Optional          Parmesan or Pecorino cheese, grated

    1. Cook past as instruction. Set aside

    2. Cook bacon for about 4 minutes until brown and set aside, leaving the oil (about 1 Tbsp)

    3. Stir-fry yellow onion on the bacon grease until translucent for about 4 minutes

    4. Add garlic and Kimchi and stir-fry for 4 minutes

    5. Add tomato and sugar. Reduce to creamy consistency for about 1-2 minutes

    6. Add cooked bacon

    7. Add pasta and mix everything together until the pasta is warmed through

    8. Serve with grated cheese
